Manic Monday

Boy, was today a doozy.

I got to work only to wipe out outside of my office infront of some of our physical plant workers, then I had interviews all morning long and forgot to eat my breakfast, so I went to re-heat some vanilla orange pancakes and dropped them on the steps on the way back to my office - butter side down, of course.

But, I roped two co-workers into going to Subway with me and it was a very theraputic time :) I missed so much while I was gone - they were able to fill me in on everything. Work was crazy hectic all afternoon but I got a workout in, had a good meeting with my MBA Finance group, and am getting some much needed laundry done.

Getting back into shape is tough - especially since I feel like I can't shake this cough - so tonight was only an OK workout, although it was better than nothing!

I was on the treadmill for about 30 minutes. I did intervals like this:
0:00 - 4:59 - 1%  incline, 4 mph (15 min mile)
5:00-9:00 - 1% incline, 5.5 mph (11 min mile)
9:01-9:15 - 1% incline, 4 mph
9:15-9:45 - 1% incline, 2 mph (30 min mile)
9:45-9:59 - 1% incline, 4 mph
10:00-14:00 - 1% incline, 6 mph (10 minute mile)
14:01-14:15 - 1% incline, 4 mph
14:15-14:45 - 1% incline, 2 mph (30 min mile)
14:45-14:59 - 1% incline, 4 mph
15:00-19:00 - 1% incline, 5.5 mph
19:01-19:15 - 1% incline, 4 mph
19:15-19:45 - 1% incline, 2 mph (30 min mile)
19:45-19:59 - 1% incline, 4 mph
20:00 - 25:00 - 1% incline, 6.5 mph (A 9:10 min mile or so... ish...)
25:01 - 30:00 - 1% incline, 2 mph

Then I did 5 sets of abs, 45 seconds on, 15 seconds off, and got a good stretch in.



Here's to getting another workout in tomorrow afternoon! (And wearing my new Marley Lilly tank didn't hurt!)

My Life in Instagram


On Sunday, Logan and I cuddled on the bed and talked about everything - it was so nice to just sit and TALK with him. And of course, the kitten cuddles didn't hurt either. Cosette was knocked out in the crook of my knee.


Logan got to meet Maggie May - the newest addition to the Gumpman household. Is it awful that this picture makes me so excited to have a family with this man one day?! He's just going to be the most perfect father.


Logan missed the first batch of the peanut butter cookies I made, so of course I cranked out a second batch with plenty to take back with him for road snacks.


I was lucky enough to meet an accepted applicant and her family for brunch on Friday - this place has been featured on Diners, Drive ins, and Dives and it did NOT disappoint!


I had a fair on Thursday night in Jacksonville and this was our hospitality gift - I ate all mine before the fair began - whoops! (Chocolate covered popcorn is the worlds most perfect salty and sweet mix!)


Cooked dinner with my Aunt and Uncle -- Hard Cider, Barbecue Chicken, and homemade mac and cheese hit the spot! Sitting pool side with temps in the mid-70s and talking wedding with my family was the cherry on top.


My fair this morning was great but I was tuckered out -- the coffee was much needed when I had 4 hours of appointments on the books for my Saturday.

Dear Job Application - Please have good mojo and let the employer call me soon! This summer job would be the perfect fit for my time between May and the wedding!

Happy Tuesday

Sorry for being MIA -- I was at our conference swim meet last weekend and there was no wifi at the hotel. (Can you believe it? It's 2013! We paid more than $85/night to stay there! I thought wifi was a gimmie! #firstworldproblem)

I was feeling under the weather over the weekend and thought a good nights sleep would catch me up, but yesterday, I would have sworn I was close to death. I thought some fresh air (and some retail therapy) might help, but I only felt worse when I got home. Luckily, my baby sister took good care of me, and after 13 hours of sleep, I'm feeling much better today.

While I was out, I did pick up a few things though:

These Lilly Holiday Cards (although they don't say holiday on them so I think I can get away with sending them year round.)
Clinique Rinse-off Foaming Cleanser - I'll let you know how I like it!


While I was out, I also got a key chain from Lilly as a Valentines Give-a-Way, and a Clinique goody bag worth $65 with blush, mascara, lipstick, lip gloss, eye cream, and moisturizer!

I will have LOTS of catch-up to do the rest of this week, but Logan should arrive mid-afternoon on Friday and I cannot wait! :) It's been a long 4 weeks, and this time we'll only have to say goodbye for 3 weeks before I make a trip down to Georgia to see him.

Chicken Chili!

My roommate introduced this great recipe to us and it's quickly becoming a Court Street favorite!

Chicken Chili
4 chicken breasts
1 packet taco seasoning (we haven't advanced to making our own yet...)
1 can of corn
1 can of kidney beans
1 jar of salsa
1 can of black beans

Add all ingredients to a crock pot and let cook on low for 8 hours or high for 4 hours. Shred the chicken and add shredded cheddar cheese and tortilla chips and enjoy! It should make 8 servings.
WW+ points: 5

Here is our finished result! (We use a crock pot liner - clean up is non-existent!)


It is filling - thanks to those beans! - and delicious. We plan to use our leftovers tomorrow night, using the chicken to fill crescent rolls and baking. 

It's perfect for a chilly night!

I hope everyone's week is off to as good of a start as mine!

My alarm was bumped up 15 more minutes this week, as per my new sleep resolution, so wake-ups are coming at 6:15 now. Still not too bad - I have time now to run to the YMCA in the mornings and get a quick 30 minute cardio session in. Not the worlds most thorough workout, but better than nothing, right?

Yesterday I ran for 30 minutes doing intervals - 2 minutes at a strong pace, 2 minutes at an uncomfortable pace, 1 minute walking. All at a 1% incline - I read once that it helps simulate outdoor running better.

This morning I just did 30 minutes on the elliptical, high intensity, high incline. Boring, but effective.

I'm still doing no-screen-time after 9 PM (and aiming for a 10 PM bedtime... I'm a Granny), and it's going well! I even pulled it off on Sunday with the Super Bowl. I really feel like I sleep better. Getting my bags packed, lunch put together, my pent up feelings journaled, and some pleasure reading in -- I go to bed with far less on my mind than I usually do.

I had a wildly productive day yesterday and ended the day with Moe's Monday with Bonnie and Em and grocery shopping. (We always meal plan as a group and head out buying the bare minimum - no useless snacks lying around, no food going bad, no need to munch when we're bored! Emily is also a coupon-er, which helps us save even more money.)


Leftovers = instant lunch the next day!

I have a crazy week ahead of me, but I'm trying to find time to get to my parents house and see this doll baby:


My parents got a Border Collie - Maggie May - and she is so cute. I just want to play with her all the time! It makes me antsy to get married and adopt a dog with Logan :)

My Weekend!

First of all, I was able to lose 2.2 pounds this week - I was a happy, happy girl at weigh in yesterday morning! I was disappointed that I had zero time to work out last week, so knowing my change in portion sizes paid off was a nice affirmation.

This week was tough at work, and a co-worker treated me to an "I Value You" latte Friday morning. I will miss my office so much when we move to Tennessee!



I left after weigh in for Richmond, where I tried on and ordered my bridesmaids dress for a friend's wedding this summer - I'm so excited for my bridesmaids to get to town next month so we can pick out mine!

I met up with my cousin and Aunt, and we went to lunch at the Cheesecake Factory. The one in Richmond is the closest to me, and it's my favorite guilty pleasure place.


We all ordered different cheesecakes so we could try each others. I ordered the Lemon Raspberry (I love anything lemon), my cousin got the Chocolate Raspberry, and my aunt got the Reese's Peanut Butter Cup. We saved them for that night though :)

Then we did a little shopping, and I bought table runners for the wedding!


We found them at Hobby Lobby. They are pre-treated to resist stains, and I was worried they would feel cheap, but the fabric feels great - it has almost a canvas-y texture. They are rectangle, 60x104 in. and we'll cut them into thirds lengthwise. So, each table cloth will give me three 20x104 in. runners. (Approximately.) They were part of Hobby Lobby's spring time inventory, so they were 30% off, making them $24.50 apiece. So, I got my table runners for approximately $8.17 each! I am beyond thrilled! I haven't settled on a specific table-scape yet for centerpieces and what not, but I can just imagine these with some milk glass vases and jars with hydrangeas sticking out -- only 194 days until the wedding!

Finally, because the cable is out out here in the boonies, we played board games all night. We picked up some Crispin in the way home, ate our cheesecake, and enjoyed each others company :)

Dear Weekly Resolutions - I'm kinda digging you. Right now I'm excited for Week 2 of no-screen-time and my 6:15 alarm next week!

Dear Fiance - I'm so glad you're back from the field. 14 more days til you're back in Virginia!

Dear Work - I'm so proud of us - a record breaking year for applications and I am 100% on top of my yield plan. This year, it's personal.

Dear Homework - Thank you for making sense so far and not being too overwhelming. It's a great way to start the semester.

Dear Weekend - I know you're doing to go by too fast - as always - but I'm excited for you anyways.
